We used to have that in the school cafeteria -- they would chop up all kinds of vegetables, and mold it in Jell-O.  They used lemon Jell-O, though, not one of the savory ones.  They called it "health salad" -- it looked pretty, and tasted good, too.  Now I'm in the mood for some!

Has anyone ever tried any of the weird flavors of Jones soda?

I guess there was even a Mashed Potato Flavor, Green Bean Casserole Flavor, Brussels Sprouts Flavor, Smoked Salmon Pate, Brocolli casserole....HARF!

The other Jell-o flavors that didn't catch on were coffee, chocolate, and cola.

Apparently that Jones soda occasionally comes out in weird flavor packs.  The ones you posted (except for the ham) were part of the Thanksgiving pack.  The ham soda was part of the Christmas pack, which also included christmas tree, eggnog, and sugar plum.  They also had a Chanukah pack, which included chocolate coins, apple sauce, latke, and jelly doughnut flavors.
